Cedar Ridge Distillery began in 2005 on the site of Cedar Ridge Vineyards, which had been founded two years earlier by Jeff and Laurie Quint.
Cedar Ridge is the first legal whiskey producer in Iowa since Prohibition. The Cedar Ridge brand debuted with bourbon in 2010 and now includes rye, wheat and single malt whiskeys. Recently, the owners have been experimenting with finishing, and this bourbon is a far cry from the typical profile of this whiskey. Distilled from a mash bill of 74% corn, 14% malted rye and 12% malted barley, it was finished for six months in Laphroaig barrels after a primary maturation in new American oak barrels. Our bottle is from batch #2.
Nose: campfire smoke, charred oak, grilled corn on the cob, caramel, vanilla, a dash of white pepper and dried herbs.
Palate: popcorn, vanilla, salted caramel, toffee, lapsang souchong tea, stewed apples, a pinch of pepper and a hint of smoke in the background.
Finish: medium long, slightly smoky, with notes of caramel, vanilla, ginger, toffee, allspice and oak.
