Starward Distillery was founded by David Vitale in Melbourne in 2008.
In October 2016 the company moved to the new location after being given substantial cash injection from Distill Ventures, subsidiary of Diageo. Starward Nova is distilled from locally grown barley and aged in Australian wine barrels, mainly Shiraz, Cabernet Sauvignon and Pinot Noir. The distillery is located in the heart of Australia’s wine region and often receives barrels within days of being emptied. That allows to “wet fill” the barrels with newly made spirit to access as much of the wine’s fruit character as possible. In the year of its debut (2016) Starward Nova scored two gold medals at the San Francisco World Spirits Competition.
Nose: very fruity and winey, malted barley, strawberries, raspberries, butter cookies, vanilla, roasted peanuts and hints of yeasts.
Palate: fruity, mixed red berries, orange peel, sweet cereals, honey, caramel, cinnamon, and delicate nutty and oaky notes.
Finish: not too long, with notes of red wine, malted barley, toffee, brown sugar, dash of cinnamon and pepper.
