Catskill Distilling Company sits in the foothills of the Catskill Mountains in Bethel, New York just minutes from the site of the 1969 Woodstock Festival.
The distillery is owned by Monte Sachs, who learnt distilling craft in Italy from the grappa producer. The distillery uses locally grown grains and water from the Catskill Mountains. Little is known about Fearless Straight Wheat formula, we can only be certain that wheat makes at least 51% of mash. The whiskey is aged in 25-gallon charred oak casks, in temperature-controlled warehouse, which was specially designed to accelerate the whiskey maturation process, for a minimum of two years.
Nose: fruity, apples, pears, vanilla, honey, candied lemon peel, milk chocolate and hints of charred oak.
Palate: buttered toast, caramel, vanilla custard, honey, cinnamon, baked apples, orange and lemon peel and charred oak.
Finish: medium long, with notes of honey, milk chocolate, oak and fading wisp of smoke.
