- Solera is a system employed by makers of Pedro Ximénez sherry. Young wine in vats of the top tier of solera is successively blended into the more mature wine in the vats on the tier below.
Product description
“Solera” means “on the ground” in Spanish and refers to the blending of different vintages of mainly wines (e.g. sherry or marsala) through a system of barrels or in a so-called solera vat.
In the case of barrels, the liquid is poured from the upper barrels to the lower ones and taken from them. The barrels are never completely emptied. In the case of vats, about 30% of the content is drained and immediately topped up with younger vintages. Auchentoshan Solera was introduced to the Travel Retail chain in 2012, but it is not clear whether it was produced using the aforementioned method or whether it was only aged in barrels previously used in the solera system (we are inclined to the second version).
Aroma: intensely fruity, bananas, oranges, raisins, nuts, milk chocolate and beeswax.
Taste: rich and complex apricots in sweet syrup, oranges, marzipan, caramel, chocolate and roasted almonds.
Finish: long and fruity, oranges, dates and chocolate-coated almonds.
