Säntis Malt is a product of Brauei Locher AG, the brewery company established by the Locher Family in 1886 and involved in whisky production since 1999. The company is located in Appenzell in Swiss Alps and since 2003 relies on locally grown barley. The Lochers produce four expressions of Säntis Whisky, each named after different Alpstein rock formation. Edition Sigel comprises whisky aged exclusively in ex-beer barrels. In the 1990s the Lochers had a stockpile of old beer casks, some of them over 100 years old and utilizing them for whisky aging seemed to be a perfect solution.
Nose: fresh and malty, hops, garden herbs, hay, toasted bread, brown sugar, apples, touch of tobacco and subtle spicy notes.
Palate: malty, white pepper, aniseed, chamomile tea, lemon peel, licorice and very shy fruity notes.
Finish: medium long and pretty bitter, pepper, oak and dried herbs.
