Distillerie du Vercors is located on a 16th-century farm in Saint-Jean-en-Royans (Drôme, southern France).
It began operating in 2015 and is the only French whisky distillery whose products are certified organic. The whisky is distilled twice from organically grown barley on its own farm and aged for at least three years in new and barrels from various spirits, then bottled with natural color and without cold filtration. The name of the drink refers to the 200-year-old redwood tree growing near the distillery. In 2021, Sequoia Single Malt Bio won a gold medal at the Women's Wine & Spirits Awards.
Aroma : fruity-malty, apples, pears, peaches, vanilla, honey, freshly baked bread, a bouquet of dry flowers and oak shavings.
Taste : mild, barley malt, vanilla, honey, buttered toast, fruit from the village orchard, a touch of spices and oak.
Finish : medium long, with notes of barley malt, vanilla, roasted peanuts, a pinch of pepper and oak.
