West Cork Distillers Co. was founded in 2003 by John O’Connell, Dennis and Ger McCarthy.
Ten years later they moved to Skibbereen, where they operate to this day. The company distills malt and grain whiskey and also produces blended whiskey, gin and vodka. The newest addition (November 2019) to the company portfolio is called ‘Cask Finish Collection’. The range consists of five expressions of triple distilled single malt whiskey aged in first fill bourbon barrels and then finished in casks selected from the finest fortified wines and spirits – sherry, port, rum, calvados and virgin casks. The whiskey presented here spent final period of maturation in Quinta da Boeira port casks.
Nose: fresh and fruity, red grapes, raspberries, cherries, toffee, vanilla, black pepper, nutmeg, hints of hay and oak.
Palate: sweet, mixed berries marmalade, grapefruits, milk chocolate, caramel, vanilla, dash of pepper and ginger.
Finish: medium long, with notes of red berries, vanilla, honey, milk chocolate, pepper and oak.
