The Ryans have been involved in whiskey for almost 200 years. John Ryan started working at the Limerick distillery in the 1820s, and his grandson Thomas moved to Dublin where he started buying, finishing and bottling whiskey.
Ryan's Malt debuted in 1913 and soon became one of Dubliners' favorites. Its production ceased in 1946. In 2013, exactly 100 years since Ryan's Malt debuted, the family returned to the old tradition. Toomevara is a limited edition from 2018 (3,500 bottles), a whiskey aged in first-fill bourbon barrels and finished in Calvados barrels from Château du Breuil. A year later, it was awarded a gold medal at the San Francisco World Spirit Competition.
Nose: green apples, baked apples, freshly cut grass, autumn leaves, a trace of pine resin, orange peel, vanilla, a pinch of cinnamon and oak.
Taste: apple pie sprinkled with cinnamon, orange and lemon peel, lemongrass, pear candies, a touch of vanilla and a light bitterness of oak.
Finish: medium long, lots of green apples, delicate notes of vanilla, citrus, spices and oak.
