West Cork Distillers Co. was established in 2003 by John O'Connell and Dennis and Ger McCarthy.

After ten years, the distillery moved to Skibbereen, where it operates to this day, distilling malt and grain whiskey. Blends are also made on site. West Cork is currently the largest distillery in the country that remains 100% Irish-owned. The company's latest offering is the "Maritime Release", a series of four single malt whiskeys presented in handmade bottles in the shape of fishing buoys. The whiskey presented here, after basic maturation in American oak barrels, was finished in Quinta de Boeira port barrels. The whiskey was bottled with natural colour and without chill filtration.

Nose: sea breeze, dark grapes, blackberries, plums, toffee, vanilla, black pepper, toasted oak and a hint of seaweed.

Taste: red berries, dried figs and plums, milk chocolate, honey, vanilla, almond flakes and a pinch of cinnamon.

Finish: medium long, with notes of berries, vanilla, honey, milk chocolate, toasted oak and sea breeze.
