Hinch Distillery plans to begin distilling in late autumn 2020. Its buildings are situated on the Killaney Estate in the market town of Ballynahinch, south of Belfast.
The driving force behind the project is Dr Terry Ross, a businessman and OBE, current president of the Northern Ireland Red Cross. Hinch Whiskey debuted in 2019, and is currently available in five versions, including a single malt, a single pot still and three blends. The Hinch Peated Single Malt presented here won a silver medal at the China Wine & Spirit Awards in 2020. It is a triple distilled malted barley whiskey with peat.
Nose: peat smoke, honey-baked ham, smoky salt, caramel, cinnamon, canned pineapple, tarred ropes and a hint of burnt rubber.
Palate : smoky and salty, grilled pork neck, roasted nuts, caramel, dried herbs, chili peppers, a drop of soy sauce and charred oak.
Finish : quite long, with notes of peat smoke, chili peppers, barbecue sauce, caramel and oak.
