In the autumn of 2018, William Grant & Sons, owners of the Glenfiddich and Balvenie distilleries, among others, proposed a new single malt whisky, Aerstone, in two versions – Land Cask and Sea Cask.
The whisky is most likely distilled at Ailsa Bay Distillery in Ayrshire, which shares a property with Girvan Grain Distillery. Brian Kinsman, Master Distiller of Wm Grant & Sons and creator of the new whisky, says: “We have developed two distinct and evocative flavour profiles under one brand, both inspired by the Scottish climate and the natural elements that influence the maturation of our whisky.” Described by its producer as “Smooth and Easy,” Aerstone Sea Cask is aged for 10 years in Ayrshire’s seaside warehouses.
Aroma : barley malt, milk fudge, vanilla, honey, buttered toast, baked apples, a pinch of cinnamon and white pepper.
Palate: honeyed breakfast cereal, vanilla, golden syrup, sponge cake, cinnamon, cloves, allspice, cooked apples and pears and a touch of oak.
Finish: not too long, with notes of breakfast cereal, vanilla, toffee, candied fruit, allspice and oak.
