- Glendalough Distillery, founded 2011, takes its name from a glacial valley in the Wicklow Mountains just south of Dublin, renowned for its medieval monastic settlement founded by St. Kevin in the 6th Century (his silhouette adorns the whiskey label).

Glendalough Distillery, registered in 2011, is named after a glacial valley in the Wicklow Mountains, famous for the monastery founded there in the 6th century by St. Kevin (an outline of his image adorns the label of each of the company's products).
The distillery produces poitín, gin and bottles whiskey, which it buys from commercial Irish distilleries, mainly Cooley. In 2015, it installed a Holstein still, but dedicated it to distilling gin. The Glendalough Single Cask edition presented here is a whiskey aged in an American white oak barrel and finished in a 6-year-old Calvados barrel imported from France. It is diluted to 42% ABV with water from the Wicklow Mountains.
Aroma : summer meadow, vanilla, honey, milk fudge, apples, pears, delicate notes of oak and summer berries.
Taste : sweet, breakfast cereals with honey, popcorn with caramel, apples, gooseberries, cinnamon and a pinch of white pepper.
Finish: medium long, with notes of honey, toffee, caramel, apple juice and a hint of cinnamon.
