The debut of Waterford whisky in 2020 caused quite a stir among whisky lovers. The distillery is owned by Mark Reynier, previously one of the co-owners of the Bruichladdich distillery, and began operating in December 2015.
The facility has two stills and one still and can produce one million litres of distillate per year. The summer of 2020 saw the debut of the Single Farm Origin Series, featuring whiskies distilled from barley sourced from single Irish farmers. Martin Foley’s Hook Farm is located about 10 miles from the distillery and is exposed to the ocean. The whisky presented here, distilled from Propino in February 2017, was aged in first-fill and virgin oak barrels (68%), French oak barrels from the famous Château Margaux (15%) and Vin doux Naturel barrels (17%).
Nose: barley malt, freshly baked bread, sea breeze, toffee, caramel, nougat, quince jelly, nutmeg, cloves, white pepper and a pinch of thyme.
Taste: toffee, salted caramel, milk chocolate, nectarines, apples, white pepper, licorice, ginger, a touch of nutmeg and fresh herbs.
Finish: medium long, with notes of pepper, ginger, cloves, cocoa, nougat, mint leaf and a pinch of salt.
