Product description
Hyde whiskey is a product of Hibernia Distillers, based in West Cork, Ireland. The company was founded in 2014 by brothers Conor and Alan Hyde, who are related to the first President of Ireland, Douglas Hyde.
Hibernia Distillers is currently limited to bottling and distributing whiskey, although distilling is planned for the near future. The Hyde 8 year old featured here is a triple distilled single grain whiskey from what we believe is the Midleton Distillery. The whiskey has been aged in ex-bourbon barrels and bottled at cask strength (59% abv) and without chill filtration in a limited edition of 1,000 bottles. (Producer's tasting note.)
Aroma: The high 59% alcohol content brings out the more pronounced aromas of cinnamon and cloves, as well as the complex sweet and spicy notes of bourbon.
Palate: Ground pepper and strong spicy notes herald flavors of buttered toast, vanilla and charred oak.
Finish: powerful and satisfying, yet velvety smooth.
