Lark Distillery is located in Hobart, Tasmania. It was founded in 1992 by Bill Lark, the first person for over 150 years who took distilling license in Tasmania. The company uses malt from the local Cascade Brewing Company and peat from its own peat bogs. Australian-style port oak barrels are used for aging and are altered into quarter casks. The Lark brand has been earning excellent reviews and scored several medals. In 2014 Lark Distillery acquired Old Hobart Distillery along with Old Overeem brand.
Nose: rich and fruity, black cherries, raspberries, blackberries, toffee, caramel, cinnamon, touches of cocoa and nutmeg and hint of peat.
Palate: rich, slightly winey, black cherries, raspberries, candied orange peel, toffee, chocolate-coated hazelnuts, hints of cinnamon and pepper.
Finish: pretty long with notes of black cherries, dark chocolate and bitter orange marmalade.
