Lark Distillery, based in Hobart, Tasmania, was established in 1992. It is owned by Bill Lark, the first person in 150 years to apply to the local government for a distilling licence.
The distillery uses malt from a local brewery, Cascade Brewing Company, and also owns the peat bog. For the edition presented here, Distiller's Selection, Bill Lark used distillates aged in casks with a capacity of approx. 100 liters of local port-type wine. In recent years, Lark whisky has won several medals and awards, including the title of "Australian Whisky of the Year" several times. In 2014, Bill Lark purchased the Old Hobbart Distillery along with the rights to the Old Overeem whisky produced there.
Nose : rich, fruity, black cherries, raspberries, blackberries, toffee, caramel, cinnamon, traces of cocoa and nutmeg and a subtle note of peat in the background.
Palate: rich, slightly winey, black cherries, raspberries, candied orange peel, toffee, chocolate-covered hazelnuts, traces of cinnamon and pepper.
Finish: quite long, with notes of black cherries, dark chocolate and bitter orange jam.
