Penderyn, Wales’ only whisky distillery, commenced operations in 2000. The distillery is equipped with an extraordinary still designed by Dr David Faraday, a descendant of Michael Faraday, often called the ‘father of electricity’.
The apparatus has a clarifier and rectification column installed and produces a distillate with an alcohol content of 92%. Penderyn Peated is an extraordinary whisky, distilled from "unpeated" malt, and partly matured in barrels in which previously matured smoke-peat distillate. In 2008, this whisky won a silver medal in its category at the International Wine & Spirits Competition. Penderyn Peated is an annual edition limited to 5,000 bottles.
Nose: fresh barley malt, vanilla, apples, peaches, salted nuts, candle wax and a bit of peat in the background.
Palate: buttered toast, baked apples, milk fudge, nut nougat, pepper, a distant whiff of peat smoke and light notes of spirits.
Finish: not too long, some oak and peat, anise and pepper.
