The Dingle Whiskey Distillery is based in the town of Dingle, County Kerry.
It was founded in 2012 by Olivier Hughes, Liam LaHart and Peter Mosley, owners of Porterhouse Brewing Company. Distillation of vodka and gin began in October 2012, with the first barrel of whiskey being filled on December 18 of that year. Dingle Lúnasa is a triple-distilled single malt whiskey aged in American oak barrels and finished in Widow Jane bourbon barrels. It is the fourth edition of the "Wheel of the Year" series, referring to the ancient Celtic calendar based on holidays celebrating the connection between man and nature. Each of them heralded a change of season, weather and the surrounding nature; Lúnasa meant the harvest season. The whiskey was released in the autumn of 2023.
Nose: salted caramel, vanilla, butter cookies, pineapple, lemon sorbet, red berries and delicate floral and oak notes.
Taste: strawberries, raspberries, dark chocolate, honey, vanilla, sugared peanuts, a hint of cinnamon and white pepper.
Finish: medium long, with notes of red berries, chocolate, caramel, allspice and toasted oak.
