The Dingle Whiskey Distillery is based in the town of Dingle, County Kerry.
It was founded in 2012 by Olivier Hughes, Liam LaHart and Peter Mosley, who founded the Porterhouse Brewing Company in 1996. Distillation of vodka and gin began in October 2012, with the first barrel of whiskey being filled on December 18 of that year. Dingle Bealtaine is a triple-distilled single pot still whiskey aged in bourbon barrels and finished in Shiraz barrels. This is the third edition of the "Wheel of the Year" series, which refers to the ancient Celtic calendar based on holidays celebrating the connection between man and nature. There were eight such holidays, each heralding a change of season, weather and the surrounding nature. Dingle Bealtaine was released in 2023, and the edition consisted of 5,500 bottles.
Nose : raisins and sultanas, strawberries, raspberries, plums, vanilla pudding, toffee, cinnamon, notes of cardamom and charred oak.
Palate : black cherries, blackberries, Hungarian jam, chocolate-coated raisins, roasted peanuts, caramel, notes of vanilla and oak.
Finish : medium long, with notes of mixed berries, milk chocolate, walnuts, herbs and oak.
