The debut of Waterford whisky in 2020 caused quite a stir among lovers of this drink.
The distillery belongs to Mark Reynier, previously one of the co-owners of the Bruichladdich distillery, and began operating in December 2015. The plant is equipped with two stills and one distillation column and can produce one million liters of distillate per year. Reynier, following the example of French wine producers, attaches great importance to the so-called "terroir", which is emphasized by the "Single Farm Origin Series" (whisky distilled from barley from individual Irish farmers). Waterford Cuvée debuted in 2021 and is a marriage of 25 "single farm whiskies". In the maturation process, American oak barrels, first fill and "virgin oak", French oak barrels and Vin doux Naturel barrels were used. The edition consisted of 40,000 bottles.
Aroma : barley malt, vanilla cream, toffee, caramel, nougat, coffee cake, orange peel, red apples, mint leaf, notes of lavender and oak.
Taste: slightly oily, toffee, salted caramel, apples, grapefruits, cherries, lemon jam, milk chocolate, white pepper, anise, green olives and herbal mixture.
Finish: medium long, with notes of apples, pears, milk chocolate, marzipan, white pepper and a pinch of cinnamon.
