The Dingle Whiskey Distillery was established in 2012 by Olivier Hughes, Liam LaHart and Peter Mosley, owners of Porterhouse Brewing Company.
Distillation of vodka and gin began in October 2012, and the first barrel of whiskey was filled on December 18 of that year. Exactly three years and one day later, Dingle Single Malt Whiskey debuted. For several years, the company offered limited small batch editions, and finally in 2021, the Dingle Single Malt Whiskey presented here debuted, the first product of the basic offer. This triple-distilled whiskey was aged in fresh Pedro Ximénez sherry barrels (61%) and bourbon barrels (39%) for six to seven years, and the first release was 50,000 bottles.
Nose: lemons, nectarines, pears, raisins, milk chocolate, marzipan, licorice, nutmeg, traces of aniseed and mint and sherry-soaked oak.
Palate: vanilla cream, toffee, milk chocolate, crème brûlée, ripe apples and apricots, honeyed almonds, a pinch of black pepper and nutmeg.
Finish : medium long, with notes of milk chocolate, dried fruit, caramel, a mixture of kitchen spices and oak tannins.
