In the fall of 2019, Glendalough Distillery announced the release of the company’s first-ever pot still whiskey.
Distilled from a mash of 33% malted, 67% unmalted barley at an undisclosed distillery, the whiskey spent three years in fresh bourbon barrels and an additional year in virgin 250-litre Irish oak barrels (the oaks came from the forests surrounding the distillery). The whiskey’s label includes the oak, barrel, batch and bottle number (ours is from barrel no. 4, made from oak no. 5). Glendalough Pot Still does not have the “Single” designation, meaning it comes from a single distillery. The company plans to blend its own contract whiskey with its own once it has reached the right age, a recipe for “modern pot still whiskey”.
Nose : breakfast cereals, vanilla pudding, crème brûlée, roasted chestnuts, cinnamon, cloves, toasted sesame seeds and charred oak.
Taste : slightly oily, maple syrup, vanilla, banana cake, candied ginger, pepper, cloves, cinnamon, mixed dry herbs and oak.
Finish : quite long, herbal-spicy, with a hint of vanilla and strongly marked oak tannins.
