Koval, the first legal distillery since Prohibition, based in Chicago, was established in 2008.
Its founders are Robert and Sonat Birnecker, Robert previously secretary of the Austrian embassy in Washington, Sonat lecturer in Jewish customs and culture. Koval Four Grain is one of Birnecker's unique whiskeys distilled according to their own formula, which is made of rye, wheat, oats and barley malt. It is aged in 30-gallon, strongly charred barrels for an average of 2 years. In 2012, Koval Four Grain won a gold medal at the International Whisky Competition. All Koval whiskeys are bottled in single barrel versions.
Aroma: a bunch of bananas, vanilla pudding, brown sugar, candy, honey, hay, a pinch of cinnamon and a bouquet of dry flowers.
Taste: mild and sweet, banana cake, honey, vanilla, maple syrup, licorice, cinnamon, notes of pepper and oak.
Finish : medium long, with notes of honey, vanilla, licorice, pepper and a touch of oak.
