West Cork Distillery was founded by John O’Connell, Dennis and Ger McCarthy in County Cork in 2003.
The company uses only locally grown grain for whisky production and malts some of its barley. West Cork is primarily focused on whiskey production, which currently accounts for 95% of the business, while its Garnish Island Gin makes up remaining 5%. The newest addition to the company portfolio called ‘Cask Finish Collection’ was launched in November 2019. The range consists of five expressions of triple distilled single malt whiskey aged in first fill bourbon barrels and finished in casks selected from the finest fortified wines and spirits – sherry, port, rum, calvados and virgin casks. The whiskey presented here was finished in rum casks sourced from Consortion Licorero Nacional Panama.
Nose: burnt sugar, vanilla, cotton candy, sweet pastries, baked apples, bananas, hints of white chocolate and peanut butter.
Palate: vanilla, cappuccino, caramel, toffee, coconut cookies, pralines, cinnamon, dash of ginger, and toasted oak.
Finish: medium long, with notes of caramel, vanilla, toffee, cinnamon, hints of tropical fruits, and oak tannins.
