Glendalough Distillery was established in 2011 with a mission to “restore greatness to Irish whiskey.”
The word Glendalough means “Valley of the Two Lakes” and refers to the glacial valley in the Wicklow Mountains south of Dublin. The distillery produces poitín, gin and bottles whiskey, which it buys mainly from Cooley Distillery. Glendalough Grand Cru Burgundy Cask Finish is another interesting offering from this company. After a basic maturation period in first-fill bourbon barrels, the whiskey was placed in twelve Burgundy Grand Cru (Pinot Noir) barrels, all of which were bottled in single cask.
Aroma : fresh, fruity, vanilla, toffee, strawberries, cherries, grapes, a hint of white pepper and ginger and a trace of oak.
Palate: vanilla, honey, mixed berries, orange peel, white pepper, cinnamon and light oak bitterness.
Finish: medium long, with notes of vanilla, pepper, oak, red berries, a bit of hay and dried apples.
