Glendalough Distillery, registered in 2011, is named after a glacial valley in the Wicklow Mountains, famous for the monastery founded there in the 6th century by St. Kevin (an outline of his image adorns the label of each of the company's products).
The distillery produces poitín, gin and bottles whiskey, which it buys from commercial Irish distilleries, mainly Cooley. The Glendalough Double Barrel on display here is a single grain whiskey distilled from corn and malted barley, aged for at least three years in ex-bourbon barrels and finished for six months in Oloroso sherry casks. It is diluted to 42% abv with water from the Wicklow Mountains.
Nose : sweet, vanilla, caramel, toffee, cherries, raisins, figs, almonds, traces of lemongrass, nutmeg and oak.
Taste: lots of sweetness, vanilla cream, brown sugar, milk fudge, raisins, a touch of white pepper and oak.
Finish: medium long, with notes of vanilla, toffee, pepper, ginger and a touch of oak.
