Lambay whiskey is the result of collaboration between Ciril Camus, representative of the fifth generation of the Cognac dynasty, and Alexander Baring, the seventh Baron Revelstoke.
The brand is named after a tiny island in the Irish Sea, owned by the Baring family since 1904. The whiskey used in the blend presented here was supplied by West Cork Distillers; they are triple distilled and after a basic maturation period in bourbon barrels, finished in Camus cognac barrels, previously exposed to the sea breeze. Lambay Small Batch Blend is diluted to 40% abv with water from the local Trinity well. The Lambay brand debuted in spring 2018.
Aroma: fresh and soft, sweet cereals, vanilla, toffee, caramel, nut shells, bananas and a barely noticeable hint of sulfur.
Taste : malt, nut nougat, banana cake, honey, vanilla, milk fudge, peaches, grapes and a bit of coconut flakes.
Finish: medium long, with notes of vanilla, nut nougat, honey, grapes and a pinch of spices.
