The Irishman (originally titled Hot Irishman) is a 2008 offering by Bernard and Rosemary Walsh.
It is a unique blend of single malt and single pot still whiskey distilled three times in copper pot stills and aged in American oak barrels. Its formula is 70% single malt whiskey and the remaining 30% single pot still. The Irishman Founder's Reserve was awarded a gold medal at the 2013 International Spirits Competition in San Francisco, and Jim Murray awarded it 93 points in his "Whisky Bible". In the same year, the Walshes announced the construction of their own distillery in Royal Oak, County Carlow, which began distilling on June 21, 2016. Its target production capacity is 8 million bottles of whiskey.
Nose : mild, breakfast cereals, vanilla, honey, apples, figs, dried apricots, a handful of fresh herbs, a pinch of pepper, notes of wax and oak.
Palate: barley malt, cooked apples, nectarines, vanilla, honey, orange peel, a touch of cinnamon, white pepper and oak.
Finish: quite long, fruity and slightly spicy, with notes of vanilla, honey, summer fruits, white pepper, oak.
