Whiskey Irishman, created by Bernard and Rosemary Walch, debuted in 2007.
It was a blend of single malt and single pot still distillates, and its commercial success allowed the Walshes to begin building their own distillery in Royal Oak, County Carlow, in partnership with the Italian company Illva Saronno. After five years, the partners went their separate ways, and the distillery remained in the hands of the Italians. The Walshes have been constantly expanding the Irishman range, one of the latest offerings being the Founder's Reserve Oloroso Cask Finish presented here. After a basic maturation in bourbon casks, the whiskey was finished for 12 months in an Oloroso sherry cask.
Nose : pleasant notes of sherry, crème brûlée, hazelnuts, tangerines, dried apricots, dark chocolate and a touch of nutmeg.
Palate: rich, dark chocolate, caramel, dried apricots and figs, raisins, nougat, cinnamon, vanilla, white pepper, notes of sherry and oak.
Finish : quite long, with notes of dark chocolate, caramel, raisins, roasted nuts, cinnamon and oak.
