St. George’s Distillery was founded by father and son, James and Andrew Nelstrop. The premises were officially opened by Prince Charles in March 2007, but distillation started on December 12, 2006 with Iain Henderson of Laphroaig and Edradour fame in charge (later replaced by David Fitt). Chapter 9 presented here comprises one of the last whiskies with Iain Henderson’s fingerprint. It was distilled in December 2007 and aged in four first fill ex-bourbon barrels (nos. 568-571). Bottled at the usual 46% abv, of natural color and without chill-filtration in February 2011.
Nose: malty and slightly smoky, pine needles, lemon grass, pepper, paprika, hints of citrus peel and touch of nougat.
Palate: gently smoky and medicinal, malt, vanilla, raisins, butterscotch, pepper, lemon zest and hint of white chocolate.
Finish: medium long and pretty spicy, vanilla, pepper, nutmeg and dash of cardamom.
