The West Cork Distillery has been operating since 2003, built by John O'Connell and Dennis and Ger McCarthy.
Its original home was Union Hall, after ten years the plant moved to Skibbereen, where it operates to this day, distilling malt and grain whiskey. Its commercial offer also includes Garnish Island Gin, although gin production accounts for only 5% of the company's turnover. West Cork is based on locally grown grain, distilled in copper stills (there are four of them), and every drop of spirit is distilled three times. West Cork Black Cask is a blend of 66% grain whiskey and 33% malt, aged in bourbon barrels and finished in double-charred American oak barrels.
Nose: sweet, fruity, honey, caramel, vanilla, bananas, tangerines, pears, Nutella and traces of charred oak.
Taste : lots of vanilla and caramel, honey, apricots, orange jam, cinnamon, notes of nutmeg and fresh herbs.
Finish : medium long, with notes of toffee, caramel, charred oak, pepper, nutmeg and cocoa.
