In 1987, John Teeling purchased a disused distillery (previously producing ethanol) and after a significant investment began producing grain and malt whiskey.
Cooley experienced more problems than successes in its first decade, but the new millennium brought it financial liquidity. In December 2011, Teeling sold the distillery to Jim Beam Global and immediately began operating as an Independent Bottler under the Teeling Whiskey Company banner. In 2015, Teeling Whiskey Company registered its own distillery. Teeling Single Grain is a whiskey distilled at Cooley Distillery using a formula of 95% corn and 5% malted barley, aged in Cabernet Sauvignon barrels and bottled at 46% ABV without chill filtration.
Nose: sweet, delicately floral, apples, red grapes, vanilla, honey, cornflakes, brown sugar and a drop of coconut water.
Taste : soft, cranberries for meat, coconut flakes, bananas, toffee, buttered toast, a pinch of cinnamon and cocoa powder.
Finish: medium long, with notes of sweet cereal, cocoa, caramel, allspice and dried berries.
