The opening of Teeling Whiskey Distillery in Dublin in 2015 marked a new chapter in the history of this city, once the centre of Irish whiskey production.
The distillery is equipped with three copper stills and can produce 500,000 litres of distillate per year, and production is divided between single malt and single pot still. The company, probably the only whiskey producer in Ireland, has also had single grain whiskey in its permanent offer for years. It is distilled from a mash composed of 95% corn and 5% malted barley and is usually aged in bourbon and red wine barrels. The 15-year-old presented here is a notable exception - after basic maturation in bourbon barrels, it spent another 12 months in Sauvignon Blanc barrels. The whiskey was bottled at 50% abv without chill filtration in 2023.
Nose: mild, green apples, pink grapefruit, Meyer lemons, vanilla, lemongrass, traces of pencil shavings and honeysuckle flowers.
Taste : fresh, fruity, pears, apples, honeydew melon, orange and lemon peel, vanilla, white pepper and toasted oak.
Finish: medium long, with notes of citrus, vanilla, white pepper, lemongrass and oak tannins.
