Waterford Distillery is an investment by Mark Reynier, previously one of the co-owners of the Bruichladdich distillery. In 2014, he purchased an old brewery and adapted it to distill whisky.
The facility is equipped with two stills and one distillation column, and the priority is malt whisky production. In the summer of 2020, the Single Farm Origin Series debuted, featuring whiskies distilled from barley sourced from single Irish farmers. Here we present the second edition of Waterford Sheestown, a whisky distilled in 2016 from barley grown by Philipp O'Brien in County Kilkenny. The maturation was carried out in American oak barrels, first fill, and "virgin oak", barrels made of French oak and barrels from sweet French wine (Vin doux Naturel).
Aroma : barley malt, summer meadow, peaches, apples, nut nougat, toffee, caramel, shortbread biscuits and a pinch of cinnamon.
Taste : sweet breakfast cereals, vanilla, marzipan, milk chocolate, caramel, white pepper, a pinch of nutmeg and dried herbs.
Finish: medium long, with notes of vanilla, milk chocolate, cappuccino, cinnamon and a hint of mint.
