Shinobu Distillery is based in Niigata Prefecture, known in its native Japan as the “Prefecture of the Three White Treasures” – snow, rice, and sake.
The word "Shinobu" means "patience and tolerance" and was once a reference to samurai traits. The project was created by master distiller Ken Usami, previously owner of Niigata Beer Company. Shinobu offers blended and blended malt whiskies, the formulas of which Usami does not disclose (at least some of the components come from outside Japan), finished in Japanese Mizunara oak barrels. In 2022, the Koshi-no Shinobu Pure Malt Lightly Peated presented here won a gold medal at the International Wine & Spirits Competition.
Nose : slightly peaty, nectarines, peaches, lemons, vanilla pudding, milk chocolate, sweet bread, a touch of cinnamon and light herbal and smoky notes.
Palate : mild, pleasantly peaty, oranges, pink grapefruits, vanilla, milk fudge, buttery croissant, notes of cinnamon and lemongrass and a trace of smoke in the background.
Finish: medium long, with notes of toffee, vanilla, citrus, toasted oak, a bit of smoke and ash.
