Shinobu Distillery is a project of Ken Usami, master brewer and founder of Niigata Beer Company about 20 years ago.
In 2017, Usami obtained a whisky license and began construction of the Shinobu distillery in Niigata Prefecture, known in its native Japan as the “Three Treasures Prefecture” of snow, rice, and sake. Little is known about the formula for the Koshi-No Shinobu 15-year-old presented here. It is the creation of Ken Usami, who used “single malts aged in bourbon and sherry casks from around the world.” The blend was finished in Japanese Mizunara oak casks. In 2020, the whisky won a gold medal at the World Whisky Awards.
Nose : soft and sweet, sweet breakfast cereals, honey, cappuccino, blueberry cheesecake, nectarines, vanilla, cinnamon, candied ginger, notes of lemongrass and polished oak.
Palate : mild, fruity, pears, peaches, oranges, sultanas, lemon jam, milk chocolate, cinnamon, cloves, notes of ginger, leather and oak.
Finish : quite long, with notes of ripe summer fruits, citrus, vanilla, toffee, cinnamon, ginger and oak.
