Ichiro Akuto's Chichibu Distillery began operation in the spring of 2008 and was the first Japanese distillery built in the new millennium.
The Akuto family produced whisky from 1946 to 2000 at the Hanyu Distillery. After its closure, Ichiro took over the remaining 400 barrels of whisky, which he soon released as Ichiro's Card Series. The "Card Series" turned out to be a hit on the market, and also provided the capital to build Chichibu. Its collector's value is constantly growing, in August 2019, at an auction in Hong Kong, it found a buyer for $917,000. Ichiro's Wine Wood Reserve is a blend of Chichibu and Hanyu single malts and undisclosed Scotch ones finished in unusual wine barrels, so-called ovum casks. They are made of French oak, have an ovoid shape and a capacity of 20hl.
Nose: strong wine notes, sultanas, raspberry jam, dried figs, hazelnuts, dark chocolate, black pepper, fennel and a hint of leather.
Taste: slightly oily, raisins, raspberries, strawberries, caramel, chocolate truffles, black pepper, roasted nuts and almonds and a mixture of dry herbs.
Finish: fairly long, with notes of mixed berries, dark chocolate, allspice, black pepper, leather and oak.
