The word "Shinobu" means "patience and tolerance" and historically referred to the qualities of samurai.
Ken Usami, owner of Niigata Beer Company, used it in the name of his distillery and whisky. In 2017, Usami obtained a license to produce whisky and began building a distillery in Niigata Prefecture, known in his native Japan as the “Prefecture of the Three White Treasures” – snow, rice and sake. He currently offers blended and blended malt whiskies, the formulas of which he does not disclose (at least some of the ingredients come from outside Japan), which are finished in Japanese Mizunara oak barrels. In 2020, the Koshi-no Shinobu Pure Malt 10 years presented here won medals in the World Whisky Awards, International Spirit Competition and World Whisky Competition.
Nose: fruity and floral, bouquet of wild flowers, oranges, tangerines, pineapples, vanilla, milk fudge, milk chocolate, cinnamon and a bit of oak.
Taste : vanilla ice cream, orange, cantaloupe, banana cake, cappuccino, toffee, golden syrup, allspice, cinnamon, a pinch of lemon pepper and a light bitterness of oak.
Finish : medium long, with notes of citrus, vanilla, toffee, cinnamon buns, a touch of ginger and oak.
