The Shin whisky debuted in 2020 in the Shinobu Distillery offering.
The construction of the plant is not yet complete, but the local master blender Ken Usami (formerly the master brewer) continues to create new versions of whisky. His is The Shin (translated from Japanese as “righteousness”), a blended malt whisky made from distillates aged in bourbon and sherry barrels and finished in Mizunara oak barrels. Little is known about the components of this blended malt, and it is possible that some of them were not distilled in Japan. Since its debut, this whisky has won several international awards, including gold at the World Spirits Competition (2020).
Nose : mild, vanilla, a little sherry, milk chocolate, sweet bread, hazelnuts, plums, cinnamon, a pinch of white pepper, traces of mint and oak.
Taste : delicate, honey, vanilla, milk fudge, sultanas, sugared nuts, orange peel, stewed apples, cinnamon, cloves and subtle oak bitterness.
Finish: medium long, with notes of vanilla, honey, candied citrus peel, cinnamon, oak and a touch of mint.
