Whiskey Hinch debuted in 2019 in the Hinch Distillery Company offer. The company planned to open its own distillery in November 2020, but the date was postponed due to the COVID-19 epidemic.
It will be based at the Killaney Estate in Ballynahinch, south of Belfast. The company’s latest offering is the “Craft & Casks” triptych, a set of three whiskies finished in craft beer barrels. The Imperial Stout Finish presented here was finished in Kremlin Imperial barrels from Whitewater Brewery in County Down. The other two editions in this mini-series are the Irish Red Eye Finish and the Rye Export Stout Finish.
Nose : roasted grain, vanilla, toffee, brown sugar, freshly roasted coffee beans, notes of cinnamon, cloves and oak.
Palate: caramel, toffee, dark chocolate, vanilla, mocha, roasted almonds, a hint of black pepper, cinnamon and oak.
Finish : medium long, with notes of burnt sugar, dark chocolate, pepper, allspice and oak.
