The Macallan 12-Year-Old Sherry Oak Cask is considered a classic in the brand's portfolio, as the series represented the first line of The Macallan products to mature whisky exclusively in sherry casks. This approach has become the foundation of the distillery's distinctive traditional flavor profile. This single malt spends 12 years in Spanish oak barrels that were previously seasoned with sherry Olaroso. The process begins with the preparation of barrels: after filling them with sherry in Spain, they are transported to Scotland, where they are used for many years of aging. The Macallan uses only first-fill barrels (first-fill), which allows to achieve maximum intensity of aromas and flavors derived from sherry, such as dried fruits, spices or chocolate.
Between the Sherry Oak Cask and Double Cask lines, the main difference is in the choice of barrels. In Sherry Oak, the whisky is matured exclusively in Spanish oak barrels seasoned with sherry, which gives it a distinct, deep character. Double Cask, on the other hand, combines European and American oak casks (both types seasoned in sherry), which softens the flavor profile, introducing more subtle notes.
