Cotswolds Distillery is owned by David Szor and commenced operations in September 2014.
The distillery has a single pair of stills for whisky distilling (one called Mary, the other Janis) and a separate still for gin distilling, and uses locally grown barley for its malt whisky, which is malted at the oldest British malthouse in neighbouring Warminster. In 2018, the distillery began experimenting with rye whisky. The Cotswolds 2015 presented here is a single cask release for German distributor Kirch Imports. Distilled on 12 April 2015, the whisky was aged for over four years in an Oloroso sherry butt (American oak) before being bottled in January 2020 at cask strength (61.5% abv) in an edition of 630 bottles.
Nose: sherry, raisins, orange peel, dried pears and apricots, walnuts, milk chocolate, caramel, mint leaf and a bit of oak.
Palate: chocolate-coated raisins, roasted nuts, peaches, apricots, cherries, barley malt, caramel, a hint of dried herbs and sherry-soaked oak.
Finish: quite long, with notes of sherry, dried fruit, milk chocolate, a pinch of spice and oak.
