Corsair Artisan Distillery was founded in 2008 by two Nashville residents, Derk Bell and Andrew Webber.
Corsair has two distilleries equipped with different types of stills, one in Nashville, Tennessee, and the other in Bowling Green, Kentucky. The company's offerings include whiskey, vodka, gin, rum, and absinthe, and the owners are constantly experimenting with new formulas. The result of one of the latest is the Dark Rye whiskey presented here, distilled from a mash of malted rye (61%), chocolate rye malt (4%), and malted barley (35%). It is worth noting the absence of corn in the mash formula. The whiskey is aged in 15-gallon, charred American oak barrels for a year. The bottle presented here is from batch no. 25 of 350 bottles.
Nose: fresh malt, slice of wholemeal bread, cocoa powder, coffee beans, charred oak, roasted almonds, dried plums and a pinch of Christmas spices.
Palate : charred oak, dark chocolate, coffee, caramel, dried cherries and plums, hazelnuts and mint leaf.
Finish : medium long, with notes of cereal, dried dark fruit, cocoa, burnt sugar and oak.
