Fred Laing's XOP series debuted in 2014, a dozen or so months after the division of Douglas Laing & Co.'s assets between the two Laing brothers.
XOP stands for Xtra Old Particular and refers to the finest single malt and single grain casks from the family's stockpile. The Carsebridge Single Grain 45 years old presented here is one of the gems of the XOP collection. Distilled in October 1976, the whisky spent over four decades in a refill hogshead cask (DL 15621). Bottled in March 2022 at cask strength (49% abv) and without chill filtration in an edition limited to 192 bottles. The Carsebridge Distillery began operating in 1799 and has been producing exclusively grain whisky since 1851. In 1983, DCL decided to close it.
Nose: An explosion of aromas of green apples, polished oak, leather and coconut flakes.
Taste: on the palate, the sweetness of honeycomb, yeast rolls and melted butter, enriched with liquid chocolate and ginger.
Finish : long, with notes of sweet molasses, homemade macaroons, sultanas and fragrant mocha.
