The Character of Islay Whisky Company was established in 2019 as a subsidiary of Atom Brands, owners of Master of Malt and That Boutique-y Whisky Company.
Their initial bottling, Aerolite Lindsay, was 10 years old single malt sourced form undisclosed distillery on the island. The following year they introduced ‘The Stories of Wind and Wave’ range, with the objective to “represent the unique characteristics of Islay spirits and explore stories, legends and experiences associated with the island and its people”. Octomore whisky certainly fits the company profile, the one presented here was distilled in 2011 and aged in cask # 11941 for nine years. The whisky was bottled at 50% abv in 2020.
Nose: whiffs of peat smoke and sea breeze, seaweed, apples, lemon peel, vanilla pods, cappuccino, roasted peanuts and oak.
Palate: peat smoke, vanilla, salted caramel, green apples, grapes, lemon curd, roasted nuts, white pepper, hints of seaweed salad and oak.
Finish: fairly long, with notes of peat smoke, sea breeze, apples, vanilla, roasted nuts and oak.
