Wolfburn is a new kid on the block, however the original Wolfburn Distillery operated from 1821 to the 1860s on site about 350 meters from the new one.
The name Wolfburn refers to a nearby freshwater source Wolf Burn. The distillery is located in Thurso, Caithness, what makes it the northernmost distillery on the Scottish mainland. It started distillation in January 2013 and the first bottles of Wolfburn single malt were offered for sale in March 2016. Here we have Wolfburn distilled in 2013 and aged in second fill Pedro Ximénez sherry cask # 802 for seven years. Bottled at natural strength of 52% abv for the Dutch importer in 2021 with an outrun of 597 bottles.
Nose: distinctive sherry notes, toffee, milk chocolate, mocha, pralines, sultanas, hints of sweet cereals, notes of cinnamon and clove.
Palate: milk chocolate, butter croissants, baked apples, nectarines, caramel, licorice, white pepper, allspice and delicate oaky notes.
Finish: medium long, with notes of milk chocolate, raisins and sultanas, white pepper, nutmeg, hints of licorice and oak.
