Wolfburn is one of Scotland's youngest distilleries (the first distillation took place in January 2013), although a distillery of that name operated between 1821-186(?) at a site approximately 350 metres away.
Wolfburn is based in Thurso, Caithness, making it the most northerly distillery on mainland Scotland. The distillery has a single pair of stills and can produce 135,000 litres of spirit per year. Distilled in 2013, this whisky spent seven years in a refilled Oloroso 710 sherry cask and was bottled at 51.4% abv for the Dutch market in an edition of 603 bottles. The name Wolfburn refers to the Wolf Burn, the water source of the original distillery.
Nose: slightly alcoholic, blackberries, cherries, red apples, orange peel, toffee, caramel, roasted chestnuts, a pinch of pepper and a fleeting trace of smoke.
Palate: quite spicy, multi-berry jam, raisins, honey, roasted nuts, licorice, black pepper, ginger, notes of sherry and oak.
Finish: medium long, with notes of honey, milk chocolate, plums, red berries, a bit of peat and oak.
