Fred Laing’s Old Particular series debuted in September 2013, shortly after the division of the assets of Douglas Laing & Co. between the two Laing brothers.
It is the equivalent of the Old Malt Cask series, which is owned by the newly formed Hunter Laing & Co and headed by Stewart. Big Peat is a blended malt made from single malts distilled on Islay (Ardbeg, Bowmore, Caol Ila and Port Ellen), but this edition is an exception; it is a single malt from “the island’s most distinguished distillery”. Distilled in November 2005, it spent over 15 years in a refill hogshead cask DL 14976 and was bottled at cask strength (51.9% abv) in May 2021 in an edition of 286 bottles.
Nose: peat smoke and sea salt, burnt rubber and autumn leaves, vanilla, honey, orange peel, pears, apples, lemongrass and a pinch of pepper.
Palate : slightly oily, peat smoke, sea breeze, seaweed salad, vanilla, brown sugar, lemon and orange peel, white pepper and oak.
Finish : long, with notes of peat smoke, burnt oak, vanilla, white pepper, citrus peel and a hint of tar.
