Most whisky producers, including of course independent publishers, celebrated the new millennium with commemorative limited editions.
As a rule, these were quite expensive editions of old whisky offered in a rich presentation. The Signatory Vintage company did not quite follow a similar path, preparing excellent, although relatively young, but at the same time carefully selected whiskies. One of them was the Highland Park presented here, a whisky distilled on November 23, 1988 and aged in a sherry butt cask no. 11731 for over 11 years. The millennium edition hit the market on December 9, 1999 in an edition of 490 1.5 liter bottles.
Nose: lightly smoky sherry, milk chocolate, raisins, dried orange peel, pink grapefruit, black coffee, walnuts, honey, caramel, a bit of herbs and oak.
Palate: rich, sherry-soaked raisins, toffee, bitter orange jam, prunes, caramel, toffee, honey, Christmas gingerbread, licorice, nutmeg, a pinch of pepper and oak.
Finish : quite long, with notes of honey, toffee, orange peel, roasted nuts, cocoa, nutmeg and a fleeting trace of smoke.
