The small Caribbean island of Trinidad once boasted as many as 50 rum distilleries. The Caroni distillery was founded in 1918 on the site of an old sugar mill.
The distillery used both traditional stills and column stills, and the rum produced there was heavy, just right for supplying the British Navy. In 2001, the distillery was sold to Angostura, and closed for good the following year. Caroni rum was given a second life by Luca Gargano's visit to Trinidad in 2004, when he discovered a forgotten warehouse of barrel-aged rum.
Caroni 1998 Dayanand Yunkoo Balloon is a blend of 6 American bourbon oak barrels. They were selected by Luca Gargano and 26 other Caroni rum lovers in April 2019. An edition dedicated to Dayanand Balloon, who spent 10 years as an employee of the Caroni distillery. Rum bottled in 2020 in its most natural form - without cold filtering, without additives, without coloring, without dilution.
Aroma : Intense, fruity and herbal. Notes of papaya, mango, pineapple, bananas, chocolate, cocoa, a bit of menthol, grease, spice.
Taste: Fruity, including notes of dried fruit and tropical fruit from the aroma. Accents of oak, spices, a touch of smoke.
Finish: Long, fruity.
