Wolfburn, the northernmost distillery on the Scottish mainland, has been distilling whisky since 2013. The distillery sits in Thurso, about 350 meters from the original Wolfburn Distillery, which operated from 1821 to the 1860s.
It is equipped with a single pair of stills and produces about 135,00 liters of spirit per annum. Wolfburn single malt debuted in March 2016 and received fairly good reviews. Wolfburn Nº375 Small Batch, the third expression of small batch whiskies released from the distillery, was launched in the spring of 2019. The whisky was matured for around four years in combination of 100-liter ex-bourbon barrels and second fill ex-Oloroso sherry hogsheads. Only 5500 bottles were produced.
Nose: smooth with delicate sherry notes, malted barley, honey, vanilla, coconut water, apples, mixed berries marmalde and a touch of oak.
Palate: vanilla cream, maple syrup, honey, raisins, baked apples, gooseberries, sugared nuts, hints of white pepper and ginger.
Finish: medium long, with notes of vanilla, brown sugar, honey, dash of mixed spice and oak.
